Creamy Avocado Dressing

Creamy Avocado Dressing
1 ripe California avocado peeled and pitted
1/4 cup each: fresh cilantro leaves (not packed)
1/4 cup extra virgin olive oil
1/4 cup cider vinegar
1/4 cup orange juice
3/4 tsp. sugar
1 clove garlic chopped

Puree 1 ripe, peeled and pitted California avocado, 1/4 cup each: fresh cilantro leaves (not packed), extra virgin olive oil, cider vinegar and orange juice, 3/4 tsp. sugar and 1 clove chopped garlic in a blender or small food processor until smooth. Season to taste with salt and freshly ground pepper.

Makes about 1 cup.

There is waaaaaaayyyyy too much cider vinegar in this recipe. That's all I could taste, even tried adding 2 more avocados, but the only thing that changed was the texture.
