Mediterranean Vegetarian Sandwiches
Mediterranean Vegetarian Sandwiches
1 (10- oz.) loaf Nob Hill Trading Co. Multi-Grain with Flax and Bran Bread (in our Bakery)
1/3 cup hummus (in our Deli)
1/4 cup roasted bell pepper strips cut into bite-size pieces
1/4 cup very thin slivers red onion
8 pitted kalamata olives cut into wedges
3/4 cup shredded romaine lettuce
1/2 tbsp. Greek vinaigrette with feta cheese

Prep time: 10 minutes

Cut bread in half lengthwise. Cut away some of the bread from the top half and spread hummus on bottom half; top with peppers, onions and olives. Toss lettuce and vinaigrette together in a small bowl and place over vegetables; close sandwich.

Cut in half to make 2 servings.
