Dewey’s Stuffed Flank Steak
Dewey's Stuffed Flank Steak
Ingredients
1½ to 2 lb. flank steak
1 tbsp. Italian seasoning
8 oz. sliced provolone cheese
4 oz. sliced salame
kitchen string
spring mix greens
Directions

Preheat oven to 350°F and line a baking sheet with foil. Cut a deep horizontal slit in a 1½ to 2 lb. flank steak to form a large pocket. Season inside and out with 1 tbsp. Italian seasoning. Layer 8 oz. sliced provolone cheese with 4 oz. sliced salame; place inside meat. Tie securely with kitchen string and place on baking sheet. Season on both sides with salt and freshly ground pepper; bake for 35 to 40 minutes. Let stand for 10 to 15 minutes before cutting into 1/2-inch thick slices. Serve meat over spring mix greens, if you like.

Makes 6 to 8 servings.
