Quick Risi e Bisi (Italian Rice and Peas)
Ingredients
3 cups reduced-sodium chicken broth
1½ cups long grain rice
2 cups fresh (or frozen and thawed) peas
1/4 cup shredded Parmesan cheese
1/4 cup pine nuts toasted
1/4 cup snipped fresh basil
Directions

Bring 3 cups reduced-sodium chicken broth to a boil in a medium saucepan; stir in 1½ cups long grain rice. Reduce heat and simmer, covered, for 20 minutes. Let stand for 5 minutes, then stir in 2 cups fresh or frozen and thawed peas, 1/4 cup each: shredded Parmesan cheese, toasted pine nuts and snipped fresh basil. Season to taste with salt and pepper and top with additional basil, if you like.

Makes 6 to 8 servings.
