Whole Grain Salad
2 cups cooked brown rice
1 fresh orange chopped
1 cup finely chopped fresh broccoli
1 cup dried cranberries
1 cup finely chopped cauliflower
1 cup chopped cashews
1/2 cup chopped red bell pepper
1/4 cup chopped green onion
1/4 cup flax oil
1/4 cup red wine vinegar, like Spectrum
1/4 cup orange juice
tomatoes (optional)
baked tofu chunks (optional)
canned garbanzo beans (optional)

Combine all salad ingredients in a large bowl. To prepare dressing, whisk all ingredients together. Toss with salad and chill.


Makes 4 servings.


Tip: The grains in our bulk section are easy to use – the quinoa, bulgur and millet can cook up fast. Soaking your brown rice will shorten the cooking time.
