Tomato Avocado Salsa with Grilled Tri-Tip Roast
Ingredients
2 tomatoes chopped
1 ripe avocado peeled, pitted and diced
2 tbsp. red onion chopped
2 tbsp. yellow bell pepper chopped
2 tbsp. fresh cilantro chopped
1 1/2 tbsp. lime juice
1 jalapeno pepper seeded and minced
1 clove garlic minced
Grilled tri-tip that has been seasoned andcooked
Directions

Stir together 2 chopped tomatoes, 1 ripe
avocado, peeled, pitted and diced, 2 tablespoons
each: chopped red onion, chopped
yellow bell pepper and chopped fresh
cilantro. Add 1 1/2 tablespoons lime juice, 1
jalapeno pepper, seeded and minced and 1
clove garlic, minced. Serve over thinly sliced
grilled tri-tip that has been seasoned and
cooked to your liking.


Makes 4 servings.

very flavorful. I would recommend making the salsa a few hours ahead as it is time consuming. I seasoned steak with italian and montreal steak seasoning and grilled over indirect heat.
