Grandma's Soccer Bars
2 cups old fashioned oats
1 cup whole wheat flour
3/4 cup raisins OR
dried mixed berries (optional)
1/2 cup packed brown sugar
1/2 cup ground flaxseed
3/4 tsp. ground cinnamon
1/2 tsp. salt
1/2 cup honey
1/2 cup peanut butter
2 tsp. vanilla extract
1 large egg beaten

Prep time: 10 minutes, Cook time: 20 minutes, Cool time: 5 minutes

Preheat oven to 350°F and generously coat a 13 X 9-inch baking pan with nonstick cooking spray. Stir together oats, flour, dried fruit, brown sugar, flaxseed, cinnamon and salt in a large bowl. Add remaining ingredients and mix well using your hands. Press the mixture evenly into prepared pan and bake for 20 minutes or until bars are lightly browned on the edges. Cool for 5 minutes before cutting. (Do not allow bars to cool completely before cutting.)

Makes 24 (2-inch square) bars
