Curried Macaroni Salad

Curried Macaroni Salad
1/2 lb. elbow macaroni
2 oranges peeled and cut into 1/2-inch dice
1/2 cup 1/4-inch diced red bell pepper
1/4 cup light mayonnaise
2 tbsp. minced red onion
2 tbsp. chopped fresh mint
2 tsp. chopped basil
2 tsp. chopped cilantro
2 tsp. lime juice
1 tsp. curry powder
Salt and freshly ground pepper to taste

Prep time: 15 minutes, Cook time: about 10 minutes

Cook macaroni according to package directions; rinse to cool slightly and drain. Stir together all ingredients in a large bowl. Keep refrigerated or on ice until ready to serve.

Makes 4 to 6 servings.
