Caribbean-Style Top Sirloin with Brown Sugar-Peanut Spice Rub

Caribbean-Style Top Sirloin with Brown Sugar-Peanut Spice Rub
Ingredients
1/2 cup peanuts very finely ground
1/2 cup brown sugar
1 tbsp. kosher salt
2 tsp. cayenne pepper
1/2 tsp. each: ground cloves, nutmeg and cinnamon
2 lbs. Raley's Black Angus Beef Sutter Sirloin
1 cup beef stock
Juice of 2 limes
1 tsp. chili powder
1 tbsp. smooth peanut butter
Directions

Prep time: 15 minutes, Cook time: 10 to 15 minutes

Stir together peanuts, brown sugar, salt, pepper and spices in a small bowl. Press onto both sides of beef, coating evenly. Let stand for 10 minutes, then grill over medium heat for about 5 to 7 minutes on each side or until beef is cooked to your liking. Remove from grill to a baking dish and let stand for 10 minutes. Pour any accumulated juices from beef into a small saucepan with stock, lime juice and chili powder; bring to a boil. Reduce heat and simmer for 5 minutes; whisk in peanut butter. Slice beef across the grain and serve with sauce over mashed sweet potatoes.
