Pineapple & Cucumber Salsa
Pineapple & Cucumber Salsa
Ingredients
2 medium tomatoes seeded and cut into 1/4-inch dice
1 to 3 jalapeño peppers stemmed, seeded and minced
2 cloves garlic minced
1 small red onion cut into 1/4-inch dice
1 cup each: fresh ineapple, peeled cucumber and bell pepper (any colors) 1/4 -inch diced
1/4 cup fresh cilantro chopped
Juice of 2 limes
Salt and pepper to taste
Directions

Prep time: 15 minutes, Stand time: 30 minutes

Stir together all ingredients in a medium bowl. Let stand for at least 30 minutes for flavors to mingle.

Makes about 3 cups.
