Grilled Salmon with Harissa Butter
Grilled Salmon with Harissa Butter
4 salmon fillets (about 1½ lbs.)
Harissa Butter:
3 tbsp. International Collections Sweet Red Pepper Tapenade
2 tbsp. butter softened
1/2 tsp. each: smoked paprika and garlic salt
1/4 tsp. each: ground caraway seeds*, ground cumin and ground coriander
1/8 to 1/4 tsp. cayenne pepper

Prep time: 10 minutes, Cook time: 10 to 15 minutes

Rinse salmon and pat dry. Cook salmon over medium-high heat on a well-oiled grill for about 5 to 7 minutes on each side or until cooked to your liking. Meanwhile, stir together remaining ingredients in a small bowl. Remove salmon from grill and immediately top with dollops of Harissa Butter.

Makes 4 servings.

*You can grind caraway seeds in a coffee grinder.
