Grilled Spiced Eggplant

Grilled Spiced Eggplant
2 tbsp. olive oil
1 tsp. Chinese 5 spice powder
1/2 tsp. salt
1/4 tsp. crushed red pepper
1 clove garlic minced
4 Japanese eggplants
fresh mint
feta cheese crumbled

Stir together 2 tbsp. olive oil, 1 tsp. Chinese 5 spice powder, 1/2 tsp. salt, 1/4 tsp. crushed red pepper and 1 clove minced garlic in a large bowl. Cut 4 Japanese eggplants in half lengthwise and add to bowl; toss to coat. Grill over low heat for about 5 minutes on each side or until tender. Top with chopped fresh mint and crumbled feta cheese,
if you like.

Makes 4 servings.
