Herbed Leg of Lamb
1 whole or half leg of lamb
1/2 cup orange juice concentrate undiluted, thawed
4 cloves garlic minced
1 tbsp. each: fresh rosemary, thyme and mint chopped
1/2 tsp. each: salt and black pepper coarse ground
Preheat oven to 325°F. Rinse lamb and pat dry; place
in a large, shallow baking dish. Combine remaining
ingredients in a small bowl. Brush some of the mixture
over the lamb before cooking and several times during
cook time. Roast until lamb reaches desired doneness:
10 to 11 minutes per pound for rare, 12 to 13 minutes
per pound for medium and 18 to 20 minutes per pound
for well. Let stand for 10 minutes before slicing.

Note: A whole leg of lamb weighs approximately 8 lb.
and serves 12.
