Dubliner Colcannon

2 lbs. Raley's Russet Potatoes
3/4 cup milk
3/4 tsp. salt
1 cup chopped onion
6 tbsp. Kerrygold Irish Butter
1 (10- oz.) package shredded green cabbage
1 cup Dubliner Cheese (in our Deli) shredded
Prep: 15 minutes Cook: 25 minutes Serves: 8

Peel 2 lbs. Raley's Russet Potatoes and cut into large chunks.
Boil for 20 minutes or until tender when pierced with a fork; drain
well. Mash until smooth with 3/4 cup milk and 3/4 tsp. salt. Cook 1
cup chopped onion in 6 tbsp. Kerrygold Irish Butter for 10
minutes. Add 1 (10-oz.) package shredded green cabbage and
cook for 5 minutes more. Stir into potatoes with 1 cup shredded
Dubliner Cheese (in our Deli). Drizzle with additional melted
butter, if you like.
