10 tbsp. butter divided
4 cups mushrooms (portabella, shiitake, white or brown) coarsely chopped
3 cloves garlic minced
1 cup Gruyère cheese shredded
1 tbsp. fresh sage chopped
1 tbsp. fresh marjoram chopped
1/4 tsp. salt
1/4 tsp. coarse pepper
1 (16- oz.) box frozen phyllo dough thawed
Prep: 20 minutes Cook: 20 minutes Makes: about 15 role-ups
1. Preheat oven to 400°F. Melt 2 tbsp. butter in a large skillet. Add mushrooms and garlic; cook for 10 minutes, stirring frequently. Remove from heat and let cool slightly, then stir in cheese and seasonings.
2. Melt remaining 8 tbsp. butter in a small bowl. Unroll phyllo. Place 1 sheet on a cutting board and cover remaining with a damp cloth or paper towel. Brush very lightly with butter. Spread a thin line of about 1 tbsp. mushroom filling along one edge of the phyllo sheet and roll up tightly to enclose; twist ends and place on a parchment-lined baking sheet.
 3. Repeat with remaining ingredients. Bake for 10 minutes or until golden brown and crisp.
