Basic Sour Cream Frosting

Basic Sour Cream Frosting
1/2 cup butter softened
1/2 cup sour cream
1/2 tsp. vanilla extract
1/4 tsp. salt (optional)
6 cups powdered sugar

Prep: 10 minutes Makes: 2½ cups (enough to frost 24 cupcakes)

1. Beat butter, sour cream, vanilla and salt in a large bowl of an electric mixer until smooth.
2. Add powdered sugar slowly, beating until no lumps remain.
3. Spread on premade cupcakes.
Add 4 oz. melted bittersweet or semi-sweet chocolate and 1 tbsp. milk to the butter mixture and reduce powdered sugar to 5 cups. Replace vanilla with 1/2 tsp. of your favorite extract (such as almond, maple or lemon). Sprinkle frosted cupcakes with cinnamon sugar, chocolate shavings, chopped Halloween candy or lemon, lime or orange zest.
