Honey Roasted Snack Mix

Honey Roasted Snack Mix
1/3 cup butter
1/4 cup honey
1½ tsp. vanilla extract
1/2 tsp. each: ground cinnamon and cloves
2 cups Rice Chex Cereal
2 cups honey roasted peanuts
2 cups broken graham crackers (broken in to 1/2 -inch squares)
1 (5- oz.) container crispy chow mein noodles
Recipe may be doubled.
Prep: 10 minutes Cook: about 1 hour Makes: 8 cups
1. Preheat oven to 250°F. Place butter, honey, vanilla extract and spices in a small saucepan over low heat. Cook, stirring occasionally, until butter is melted.
2. Place remaining ingredients on a large rimmed baking sheet. Pour butter mixture over cereal mixture; toss to coat. Bake for 1 hour, stirring every 20 minutes.
3. Let cool, then store in an airtight container for up to one week.
