Spinach and Cheese Omelette Roll Ups
Spinach and Cheese Omelette Roll Ups
Ingredients
4 ea eggs
3 Havarti cheese slices
3/4 cup fresh spinach coarsely chopped
3 tbsp. California Sun-Dry Smoked Sun-Dried Tomatoes
2 tbsp. fresh basil snipped
Toothpicks
Directions

Prep: 10 minutes Cook: about 15 minutes Makes: 4 to 6 appetizers

1. Preheat oven to 400°F and spray an 8-inch baking dish liberally with nonstick cooking spray. Pour 4 well beaten eggs into dish and bake for 10 to 15 minutes or until eggs are set.
2. Remove from oven and lay 3 Havarti cheese slices over eggs, breaking into pieces to fit. When cheese has melted, carefully remove eggs from dish to a cutting board. Top with 3/4 cup coarsely chopped fresh spinach, 3 tbsp. California Sun-Dry Smoked Sun-Dried Tomatoes and 2 tbsp. snipped fresh basil.
3. Roll up tightly and cut into 1/2-inch slices. Secure with toothpicks and serve immediately.
