Meatloaf and Cheese  Stuffed Mushrooms

Meatloaf and Cheese Stuffed Mushrooms
1/2 lb. lean ground beef
1/2 cup seasoned dry breadcrumbs
1/4 cup pesto sauce
2 tbsp California Sun-Dry Smoked Sun-Dried Tomatoes minced
1/2 tsp. garlic salt
Freshly ground pepper to taste
12 large stuffing mushrooms stems removed
4 oz. fresh mozzarella cheese cut in to 12 cubes

Prep: 10 minutes Cook: 20 minutes Makes: 6 appetizers

1. Preheat oven to 375°F and line a baking sheet with foil.
2. Stir together beef, breadcrumbs, pesto, tomatoes, garlic salt and pepper together in a medium bowl.
3. Place mushrooms stem side up on a prepared baking sheet. Place a cheese cube in each, then top with equal amounts of meatloaf mixture.
4. Drizzle ketchup over the tops and bake for 20 minutes.
