Limoncello Liqueur
16 lemons
2 (750-ml.) bottles 80 proof vodka
3 cups sugar
3 cups water
Prep: 30 minutes, Cook: about 5 minutes, Makes: 9 cups
Stand: 1 week, plus 1 day  
1. Pat lemons dry and remove peel with a vegetable peeler, being careful not to include any of the white pith. (Scrape any off with a paring knife, as it will make the liqueur bitter.)
2. Place peels and vodka in clean containers with resealable tops; cover and let sit at room temperature for 1 week.
3. Bring sugar and water to a boil in a medium saucepan; let boil for about 5 minutes or until sugar is dissolved. Let cool to room temperature.
4. Remove peels from vodka and add sugar mixture to taste. (Save any remaining for another use.)
5. Pour into clean, decorative bottles. Will keep in the refrigerator or freezer for up to 3 months.
