Cranberry Citrus Marmalade
Cranberry Citrus Marmalade
Ingredients
1 large grapefruit
1 large orange
1 large lemon
1 cup water
1/8 tsp. baking soda
5 cups sugar
1 cup fresh cranberries coarsely chopped
1 (3- oz.) pouch liquid fruit pectin
Directions

Prep: 20 minutes, Cook: 30 minutes
Set: 2 weeks, Makes: 6 cups

1. Scrub citrus fruits with a vegetable brush under running water, pat dry. Remove peels with a vegetable peeler, being careful not to include any of the white pith; cut into thin slivers. Remove any remaining rind and pith from fruits; coarsely chop, reserving juice.

2. Place peels, water and baking soda in a large, heavy, non-reactive (stainless steel, glass or ceramic) saucepan over medium-high heat; bring to a boil. Reduce heat and simmer, covered, for 20 minutes.

3. Add chopped fruit, juice, sugar and cranberries. Increase heat to high and bring to a full rolling boil; cook for 1 minute. Stir in fruit pectin and ladle into clean containers. Will keep, refrigerated, for up to 3 weeks.

Tip: It may take a full two weeks for your marmalade to set - no worries. Just make a note of that on your gift card. "Garnish" your gift with a purchased gourmet biscuit mix and a pretty bowl.

Can this marmalade recipe be processed in a hot water bath canner for longer shelf life. What does the baking soda do?
