Ham and Potato Alfredo
Ham and Potato Alfredo
Ingredients
1½ lbs. Yukon Gold potatoes diced
1 (10- oz.) container light Alfredo sauce
1 cup small ham cubes
1 cup Raley's Shredded Italian Blend Cheese
1/4 cup white wine or chicken broth
1 tsp. dried basil
1/2 cup cheese
Directions

Spray a 9-inch baking dish with cooking spray. Place 1½ lbs. diced Yukon Gold potatoes in dish; cover and microwave on HIGH for 10 to 12 minutes or until potatoes are soft. Stir in 1 (10-oz.) container light Alfredo sauce, 1 cup small ham cubes, 1 cup Raley's Shredded Italian Blend Cheese, 1/4 cup white wine or chicken broth and 1 tsp. dried basil in a large bowl; spread in prepared pan and sprinkle additional 1/2 cup cheese over the top. Cover and microwave for 10 minutes more.

Makes 6 servings.
