Spiced Pineapple Pecan Yams
Spiced Pineapple Pecan Yams
2 lbs. yams
1 (7- oz.) can crushed pineapple
1/4 tsp. cinnamon
A pinch of allspice
Emerald Pecan Pie Pecans

Peel and cut 2 lbs. yams in into large chunks and and place in a large microwave-safe bowl. Cover and microwave on HIGH for 12 minutes or until yams are soft. Let cool slightly, then puree in a blender or food processor. Stir in 1 (7-oz.) can crushed pineapple, 1/4 tsp. cinnamon and a pinch of allspice. Top with a generous sprinkle of chopped Emerald Pecan Pie Pecans.

Makes 4 servings.
