Grilled Shrimp with Papaya Salsa

Grilled Shrimp with Papaya Salsa
1-1/2 to 2 lb. large shrimp
2 ripe tomatoes chopped
1 small papaya peeled, seeded and diced
1/2 small red onion peeled and diced
2 tbsp. fresh lime juice
1 tbsp. oil
1 tbsp. fresh cilantro chopped
1/2 tsp. ground coriander
1/4 tsp. red pepper flakes
1/4 tsp. salt
1/4 tsp. pepper
Prep time: 15 minutes
Marinate time: 30 minutes
Cook time: 6 to 8 minutes

Combine salsa ingredients in a medium bowl. Place 1/2 cup salsa in a small bowl and set aside; pour remaining salsa in a large, shallow pan. Using 4 skewers, skewer shrimp through the tails and place in shallow pan with salsa, turning to coat. Cover and marinate for 30 minutes in the refrigerator. Grill shrimp over medium-high heat for 6 to 8 minutes or until pink, turning and basting with salsa several times. Serve with reserved bowl of salsa.
