Chunky Fish Tacos

Chunky Fish Tacos
1 tbsp. olive oil
2 green onions sliced
1 green bell pepper seeded and cut into strips
1 clove garlic minced
3 tbsp. taco sauce
1 lb. halibut, cod or other white fish cut into 1-inch cubes
4 taco shells heated according to package directions
1 cup shredded lettuce shredded
1 tomato chopped
1/2 cup fresh cilantro chopped
Prep time: 10 minutes
Cook time: 12 to 15 minutes

Heat oil in a large skillet; cook onion, bell pepper and
garlic for about 5 minutes or until softened. Stir in taco
sauce, mixing well. Gently stir in fish and cook for about 5
minutes or until firm. Fish is done when it reaches an
internal temperature of 150°F and flakes easily when tested
with a fork. Fill taco shells with lettuce, tomato and
cilantro; top with fish.

Makes 4 servings.
