Grilled Salmon Caesar Salad
Ingredients
Marinade:
3 cloves garlic minced
1 tbsp. anchovy paste
1/4 cup lemon juice
Dash Tabasco sauce
1 tbsp. Worcestershire sauce
1/2 tsp. pepper
1/3 cup olive oil
Salad:
12 oz. salmon fillets cut in to 4 pieces
1 (10- oz.) bag romaine lettuce washed and torn
1/2 cup Caesar salad dressing
Croutons
Directions
Prep time: 15 minutes
Cook time: about 8 minutes

Mash garlic and anchovy paste with a fork on a flat surface. Scrape into a bowl and whisk in remaining marinade ingredients in the order given. Pour over salmon and marinate while grill preheats. Cook fish for about 4 minutes per side or until it reaches an internal temperature of 150°F and flakes easily when tested with a fork. Toss lettuce with prepared dressing and croutons; divide evenly between 4 plates. Place warm fish
on top of each salad. Serve immediately.

Makes 4 servings.
