Cherry Chocolate Muffins
Cherry Chocolate Muffins
Ingredients
1/2 cup butter, at room temperature
3 squares Baker's Unsweetened Baking Chocolate melted
2 eggs
1 tsp. vanilla extract
1 cup buttermilk
1¾ cups flour
1 cup sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup chocolate chips
1/3 cup dried cherries
Directions

Prep: 10 minutes Cook: 20 to 25 minutes Makes: 12 muffins

1. Preheat oven to 375°F. Spray 12 muffin tins with nonstick cooking spray or line with paper wrappers; set aside.
2. Beat butter in a medium bowl until fluffy. Add chocolate, eggs and vanilla. Beat until well combined; stir in buttermilk.
3. Combine dry ingredients then add to bowl with chocolate mixture, mixing just until no lumps remain. Stir in chocolate chips and dried cherries.
4. Spoon into prepared muffin tins and bake for 20 to 25 minutes or until a wooden skewer comes out clean when inserted into the center.
