Pasta Salad with Spinach, Avocado and Macadamia Nuts
Pasta Salad with Spinach, Avocado and Macadamia Nuts
Ingredients
1/2 lb. Nob Hill Trading Co. fettuccine cooked and chilled
4 cups fresh spinach lightly packed, coarsely chopped
3/4 cup honey roasted macadamia nuts coarsely chopped
1/2 cup red bell pepper chopped
3 green onions sliced
1 avocado pitted, peeled and chopped
3/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
2.5 tsp. sugar
1/2 tsp. pepper
1/4 tsp. salt
1/4 tsp. curry powder
Directions
Prep time: 20 minutes

Place all salad ingredients in a large bowl. Drizzle with vinaigrette and toss well to coat. Serve immediately.

Lemon Vinaigrette: In a small bowl, whisk together 3/4 cup extra virgin olive oil, 1/4 cup fresh lemon juice, 2-1/2 tsp. sugar, 1/2 tsp. pepper, 1/4 tsp. salt and 1/4 tsp. curry powder.

Makes 8 servings.
