Cranberry Apple Quesadillas
Cranberry Apple Quesadillas
Ingredients
2 tbsp. butter
1 large onion sliced
2 green apples peeled and thinly sliced
8 tbsp. whole berry cranberry sauce divided
8 soft taco size flour tortillas
2¾ cups Jack or pepper Jack cheese shredded
Directions

Prep: 15 minutes Cook: 30 minutes Makes: 24 appetizers

1. Preheat oven to 400°F. Melt 2 tbsp. butter in a large skillet; add 1 very large sliced onion and cook for 10 minutes over low heat, stirring frequently.
2. Add 2 peeled and thinly sliced green apples to skillet and cook for 10 minutes more or until apples and onions are very soft.
3. Spread about 8 tbsp. whole berry cranberry sauce over one side of 8 soft taco size flour tortillas.
4. Top each with 1/3 cup shredded Jack or pepper Jack cheese and equal amounts of apple mixture. Fold in half and place on a baking sheet.
5. Bake for 10 minutes or until tortillas are crisp and cheese is melted. Cut into wedges and serve immediately.
