Cranberry Apple Quesadillas

Cranberry Apple Quesadillas
2 tbsp. butter
1 large onion, sliced
2 green apples, peeled and thinly sliced
8 tbsp. whole berry cranberry sauce, divided
8 soft taco size flour tortillas
2¾ cups shredded Jack or pepper Jack cheese

Prep: 15 minutes, Cook: 30 minutes, Makes: 24 appetizers

1. Preheat oven to 400°F.

2. Melt butter in a large skillet; add onion and cook for 10 minutes over low heat, stirring frequently. Add apples to skillet and cook for 10 minutes more or until apples and onions are very soft.

3. Spread about 1 tbsp. cranberry sauce over one side of each tortilla. Top each with 1/3 cup cheese and equal amounts of apple mixture. Fold in half and place on a baking sheet.

4. Bake for 10 minutes or until tortillas are crisp and cheese is melted. Cut into wedges and serve immediately.
