Chocolate Ginger Cookies

Chocolate Ginger Cookies
1 cup butter softened
1 cup sugar
1 cup packed brown sugar
1 tsp. vanilla
2 eggs
2½ cups flour
1 cup oats, ground in blender or food processor
1/2 cup unsweetened cocoa powder
1 tsp. salt
1 tsp. baking soda
2 cups Raley's Semisweet Chocolate Chips
1/2 cup crystallized ginger (in our Natural Foods or Produce Dept.) chopped

Prep: 10 minutes, Cook: 10 minutes, Makes: about 42 cookies

Preheat oven to 350°F. Cream together butter and sugars; beat in vanilla and eggs. Stir in flour, ground oats, cocoa powder, salt and baking soda until just combined. Stir in chocolate chips and ginger. Place tablespoon-size balls on ungreased baking sheets; bake for about 10 minutes or until slightly soft in the center. Let cool on baking sheets for about 5 minutes, then transfer to wire racks to cool.
