Cherry Chocolate Mini Muffins

Cherry Chocolate Mini Muffins
1/2 cup butter at room temperature
3 unsweetened baking chocolate squares melted
2 eggs
1 tsp. vanilla extract
1 cup buttermilk
1¾ cups flour
1 cup sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup Raley's Milk Chocolate Chips
1/3 cup dried cherries chopped coarsely
Melted white chocolate (optional)

Prep: 10 minutes, Cook: 15 minutes
Makes: about 5 dozen mini muffins

1. Preheat oven to 375°F and spray mini muffin tins with nonstick cooking spray or line with paper wrappers; set aside.

2. Beat butter in a medium bowl until fluffy. Add chocolate, eggs and vanilla. Beat until well combined; stir in buttermilk.

3. Stir together dry ingredients, then add to bowl with chocolate mixture, mixing just until no lumps remain. Stir in chocolate chips and dried cherries.

4. Spoon into prepared muffin tins and bake for 15 minutes or until a toothpick inserted into the center comes out clean. Drizzle cooled muffins with melted white chocolate, if you like.

This was an okay recipe, somewhat dry and not very sweet. I would suggest adding more chocolate chips and more chopped cherries.
