Grilled Chicken Fajitas
Grilled Chicken Fajitas
6 boneless, skinless chicken thighs
Vegetable oil for brushing chicken
1 tsp. chili powder
1 tsp. seasoned salt
1 tsp. garlic powder
1 tsp. oregano
1/2 tsp. ground cumin
2 tbsp. fresh lime juice
1 tbsp. vegetable oil
peppers strips
1 cup red bell pepper strips
1 cup yellow bell pepper strips
1 cup green bell pepper strips
1/2 red onion peeled and cut into small wedges
1 medium tomato chopped
1/2 cup mild picante sauce
8 flour or corn tortillas warmed
Prep time: 15 minutes Cook time: 20 minutes

Brush chicken lightly on both sides with vegetable oil. Combine dry seasonings and sprinkle on both sides of chicken. Place on a grill over medium heat and cook for about 10 minutes per side or until cooked through to an internal temperature of 165°F. Remove from grill and drizzle with lime juice; set aside. Meanwhile, sauté peppers and onions in 1 tbsp. oil over medium-high heat until crisp tender, about 3 to 4 minutes, stirring frequently. Stir in tomato and picante sauce; cook for 1 minute more. Cut chicken into bite-size strips and spoon into tortillas with cooked vegetables. Roll up and serve.

Makes 6 servings.
