Mahi Mahi with Mango Sauce

Mahi Mahi with Mango Sauce
4 mahi mahi fillets
1 tbsp. extra virgin olive oil
Salt and pepper to taste
4 tbsp. lime juice, divided
4 tbsp. honey, divided
2 tbsp. butter
2 large ripe mangoes, peeled and diced
1/2 cup port wine
2 tsp. water
1 tsp. cornstarch

Prep: 15 minutes, Cook: about 10 minutes, Serves: 4

1. Rinse fish and pat dry. Place on a tray, skin side down, and brush with oil; season with salt and pepper.

2. In a small bowl, stir together 3 tbsp. lime juice and 3 tbsp. honey; drizzle half of the mixture over the fish.

3. Grill fish over medium-high heat, skin side up, for 5 minutes. Turn fish and drizzle with remaining lime-honey mixture; grill for 5 minutes more or until fish reaches an internal temperature of 150°F and flakes easily when tested with a fork.

4. While the fish is cooking, melt butter in a small pan. Add mangoes and port and cook over medium heat for 5 minutes. Stir in remaining lime juice and honey.

5. Stir together water and cornstarch; add to pan. Cook and stir for 1 to 2 minutes more or until mixture is slightly thickened. Pour hot sauce over grilled fish.
