Gilligan's Coconut Muffins

Gilligan's Coconut Muffins
2 cups prepared baking mix
3/4 cup crushed pineapple (juice packed) lightly drained
2/3 cup milk
1/2 cup sugar
1/2 cup sweetened flaked coconut lightly toasted
2 tbsp. melted butter
1 tsp. coconut extract
1 egg
Prep time: 5 minutes
Cook time: 15 to 18 minutes

Preheat oven to 400°F. Spray 10 muffin tins with nonstick cooking spray. Lightly stir together ingredients and pour evenly into prepared muffin tins. Place on rack in center of oven and bake for 15 to 18 minutes or until lightly browned.

Makes 10 muffins.

QUICK BITE: This is a good make-ahead recipe. The muffins are even better a few days after baking!
