Curried Chicken & Mango Salad

Curried Chicken & Mango Salad
Ingredients
4 cups diced cooked rotisserie chicken
1 cup chopped roasted and salted cashews
4 green onions, thinly sliced
2 mangoes, peeled, pitted and cut into 1/2-inch cubes
2 stalks celery, chopped
2 tbsp. fresh lemon juice
1/4 cup mayonnaise
1/4 cup plain yogurt
1-1/2 tsp. curry powder
1/2 tsp. ground cumin
6 lettuce leaves
2 tbsp. chopped fresh cilantro
Directions

Prep: 15 minutes, Serves: 6

In a large bowl, toss chicken, cashews, green onions, mangoes, celery and lemon juice. In a small bowl, combine mayonnaise, yoghurt, curry powder and cumin. Stir into chicken mixture. Serve over lettuce leaves and garnish with fresh cilantro.
