Chinese Chicken Salad
Ingredients
4 boneless, skinless chicken breast fillets cooked and chilled
1/2 tsp. Chinese five spice powder
1 (10- oz.) package pre-washed spinach leaves
1 (8- oz.) can juice-packed pineapple chunks (reserve 2 tbsp. juice)
1 (11- oz.) can mandarin oranges drained
1/4 small red onion thinly sliced
1/2 cup sliced almonds toasted
3/4 cup Girard's Oriental Chicken Salad Dressing
Directions
Prep time: 10 minutes

Cut chicken into bite-size strips and toss with five
spice powder. Place chicken, spinach, pineapple,
oranges, onion and almonds in a large bowl. Stir
together reserved pineapple juice and dressing;
pour over salad and toss well.

Makes 4 servings.
