Pupu Shrimp on Bamboo Skewers
Pupu Shrimp on Bamboo Skewers
1½ lb. shrimp
1/2 cup pineapple juice
1/3 cup ketchup
3 tbsp. brandy
2 tbsp. soy sauce
2 tbsp. lemon juice
2 tsp. garlic finely minced
2 green onions sliced
About 2 cups fresh pineapple cut into 1-inch chunks
Prep: 45 minutes Cook: 10 minutes Makes: about 2 dozen skewers
Marinate: 4 hours or overnight
1. Peel and devein shrimp. Place in a medium bowl. Add remaining ingredients except pineapple chunks; toss lightly to mix. Cover and marinate for 4 hours or overnight, refrigerated.
2. Alternately thread shrimp and pineapple chunks onto bamboo skewers that have been soaked in water. Discard marinade.
3. Place skewers on a grill over medium-high heat and cook until shrimp turns pink, about 4 to 5 minutes per side. Remove quickly.
