Chopped Pear Salad with Walnuts and Gorgonzola

Chopped Pear Salad with Walnuts and Gorgonzola
2 (10- oz.) bags Ready Pac Lafayette Salad chopped
2 ripe bartlett pears cored and chopped
1 Medium tomato cored, seeded and finely chopped
3/4 cup chopped Diamond glazed walnuts
1/4 cup crumbled Gorgonzola cheese
Freshly ground black pepper
Pear vinaigrette (recipe follows)
Prep time: 15 minutes

Place greens, pears, tomato, walnuts and cheese in a large bowl. Drizzle with vinaigrette and toss well to coat. Serve immediately with freshly ground pepper.

Makes 6 servings.

Pear vinaigrette: Combine 1 (15-oz.) can juice-packed, drained Bartlett pears, 1/3 cup extra virgin olive oil, 1/3 cup white wine vinegar and 1/2 tsp. salt in a blender container; blend until smooth. Chill until ready to use.

May be made several days ahead.
