Grilled Brie and Pear Quesadillas
Grilled Brie and Pear Quesadillas
1 tbsp. butter
1 large onion peeled and sliced
4 burrito size flour tortillas
6 oz. Brie cheese sliced
1½ cups shredded Monterey Jack cheese
2 small, ripe Bartlett pears cored and thinly sliced
2 tbsp. fresh thyme chopped

Prep: 15 minutes Cook: 20 to 25 minutes Makes: 8 servings

1. Melt butter in a large skillet. Add onion and cook over medium heat for 10 to 15 minutes or until very soft, stirring frequently.
2. Lay tortillas on a flat surface. Place equal amounts of cheeses, pears, caramelized onions and thyme on half of each tortilla; fold over to enclose filling.
3. Place on a grill over low heat and cook for about 3 to 5 minutes per side or until cheese is melted and tortilla is crisp and golden.
