Ginger Peach Scones
Ginger Peach Scones
2 cups baking mix
1/4 cup sugar, plus additional for sprinkling over scones
1 (2- oz.) jar crystallized ginger minced
1 cup peaches peeled, chopped
1/2 cup pecans chopped, toasted
3 to 4 tbsp. buttermilk
1 tsp. cinnamon

Prep: 15 minutes Cook: 15 to 20 minutes Makes: 8 servings

1. Preheat oven to 400°F. In a medium bowl, stir together baking mix, 1/4 cup sugar and crystallized ginger. Stir in peaches, pecans, buttermilk and cinnamon, mixing until a ball forms.
2. Turn onto a well-floured board and knead several times. Press into a 9-inch circle. Cut into 8 wedges and sprinkle lightly with sugar.
3. Transfer to a parchment-lined baking sheet and bake for 15 to 20 minutes or until lightly browned and cooked through. Serve warm with butter. Makes 8 servings.

Peaches are out of season now so I used canned in stead. Toasted almonds when pecans were not available. Great substitutes. Thanks
