Salmon Salad Stuffed Tomatoes
Salmon Salad Stuffed Tomatoes
4 medium tomatoes
1 (14.75- oz.) can Bumble Bee Salmon drained
1/2 cup low-calorie balsamic vinaigrette chilled
1/4 cup chopped celery
1/4 cup chopped red onion
1/4 cup chopped red bell pepper
1-1/2 tbsp. chopped fresh dill
fresh lemon juice, to taste
pepper, to taste
Prep time: 10 minutes

Remove stem from tomatoes, cutting a 2-inch circle out
of the top. Scoop out seeds with a spoon and set
aside. Place salmon in a small bowl; carefully remove
skin and flake salmon. Add remaining ingredients and
stir just enough to blend. Spoon salad into tomatoes.

Makes 4 servings.
