Spicy Asian Vegetables with Bok Choy

Spicy Asian Vegetables with Bok Choy
1 tbsp. vegetable oil
1 (11- oz.) package Raley’s Asian Stir-Fry Vegetables (from the Produce Dept.)
2 tsp. fresh ginger grated
3 tbsp. Soy Vay Veri Veri Teriyaki Sauce
1-1/2 tsp. hot chile garlic oil
2 bunch baby bok choy thick (green tops only) sliced 1/2 -inch
Prep time: 5 minutes
Cook time: 7 to 9 minutes

Heat oil in a medium skillet. Add stir-fry vegetables and ginger; stir-fry over medium-high heat for 3 to 5 minutes or until crisp tender. Add teriyaki sauce and chile garlic oil. Cook and stir for about 2 minutes more or until excess liquid has cooked off. Stir in bok choy, cooking until barely wilted.

Makes 4 servings.

Tip! Serve chicken breasts cooked in teriyaki sauce over this quick vegetable dish.
