Chicken Piccata
4 ea Foster Farms Fresh Frozen Boneless, Skinless Chicken Breasts
Salt and pepper to taste
1/2 cup flour
2 tbsp. vegetable oil
2 cups fresh mushrooms sliced
1 tsp. garlic minced
3/4 cup chicken broth
2 tbsp. fresh lemon juice
1 tbsp. butter
Prep time: 10 minutes
Cook time: 30 minutes

Thaw chicken. Sprinkle with salt and pepper. Dust with flour, shaking off excess. Heat oil in a large skillet and sauté chicken to a dark golden brown on both sides. Remove and set aside.

Add mushrooms and garlic to skillet and sauté until mushrooms are browned. Add chicken broth and heat to boiling, scraping to loosen browned bits. Return chicken to skillet. Simmer, uncovered, for 10 minutes
or until chicken reaches an internal temperature of 165°F. Stir in lemon juice and butter.

Makes 4 servings.

• Use frozen chicken right from the bag instead of thawing. Simply simmer for an additional 5 to 10 minutes.

• Add capers to taste.
