Ham and Egg Enchiladas
Ham and Egg Enchiladas
2 cups ham diced
3/4 cup green onions sliced
2 cups Mexican blend cheese shredded
1 (4- oz.) can green chiles diced
8 corn tortillas
8 eggs beaten
1-1/4 cups fat-free half-and-half
2 tsp. Morton & Bassett Mexican Blend Seasoning
1/2 tsp. each: salt and pepper
Salsa, sour cream and avocado slices
Prep time: 20 minutes
Cook time: 45 minutes

Preheat oven to 375°F and spray a 13-by-9-inch baking dish
with nonstick cooking spray. In a medium bowl, stir together
ham, onions, 1 cup cheese and chiles. Heat tortillas in the
oven or microwave to soften and place equal amounts of ham
mixture in the center of each. Roll up and place in prepared
dish. Whisk together eggs, half-and-half and seasonings and
pour over tortillas; sprinkle remaining cheese over the top.
Bake for 45 minutes or until egg mixture is set. Serve with
salsa, sour cream and avocado slices.

Makes 4 to 6 servings.
