Breakfast Pizza
1 tbsp. butter or olive oil
3/4 cup onion chopped
3/4 cup green pepper c
3/4 cup tomato chopped
6 eggs
1/2 tsp. garlic salt
Pepper to taste
1/2 cup bacon cooked, crumbled
2 (10- oz.) packages Boboli Personal Size Pizza Crusts
2 cups mozzarella cheese shredded
1/2 cup sharp Cheddar cheese shredded
Prep time: 15 minutes
Cook time: 15 minutes total

Preheat oven to 450°F. Melt butter in a small skillet and
sauté onion for 5 minutes. Add green pepper and tomato and
cook for 5 minutes more. Meanwhile, beat eggs with salt and
pepper. Cook over medium heat in a nonstick skillet for
about 3 to 4 minutes, stirring constantly, until eggs are
almost fully cooked, but still a little soft. (They will
continue to cook in the oven.) Stir in vegetable mixture and
bacon. Place pizza crusts on 2 large baking sheets. Top with
equal amounts of mozzarella cheese, then cooked egg mixture
and finally Cheddar cheese. Bake for 8 to 10 minutes.

Makes 4 generous servings.

Tip! Heat up any leftovers in the microwave or toaster oven
for breakfast.
