Breakfast Pizza
1 tbsp. butter or olive oil
3/4 cup chopped onion
3/4 cup chopped green pepper
3/4 cup chopped tomato
6 eggs
1/2 tsp. garlic salt
Pepper to taste
1/2 cup cooked, crumbled bacon
2 (10- oz.) packages Boboli Personal Size Pizza Crusts
2 cups shredded mozzarella cheese
1/2 cup shredded sharp Cheddar cheese

Prep: 15 minutes, Cook: 15 minutes total, Serves: 4

1. Preheat oven to 450°F.

2. Melt butter in a small skillet and sauté onion for 5 minutes. Add green pepper and tomato and cook for 5 minutes more.

3. Meanwhile, beat eggs with salt and pepper. Cook over medium heat in a nonstick skillet for about 3 to 4 minutes, stirring constantly, until eggs are almost fully cooked, but still a little soft. (They will continue to cook in the oven.) Stir in vegetable mixture and bacon.

4. Place pizza crusts on 2 large baking sheets. Top with equal amounts of mozzarella cheese, then cooked egg mixture and finally Cheddar cheese. Bake for 8 to 10 minutes.

Tip! Heat up any leftovers in the microwave or toaster oven for breakfast.
