Hearts of Palm Salad

Hearts of Palm Salad
1/2 (14- oz.) can hearts of palm drained and sliced 1/4-inch thick
1/4 cup radishes sliced
1 (7- oz.) bag butter lettuce blend salad
1/4 cup white wine vinegar
2 tbsp. dry sherry
1 small shallot peeled
1 tbsp. sugar
1/4 tsp. salt
1/3 cup olive oil
pepper freshly ground
Prep time: 15 minutes

Combine hearts of palm, radishes and lettuce in a medium bowl. Chill until ready to serve. Puree vinegar, sherry, shallot, sugar and salt in a blender container. With the blender running, slowly pour in oil. Pour over salad and toss well to coat. Season to taste with pepper and serve.

Makes 4 servings.
