Kentucky Hot Brown

Kentucky Hot Brown
1/4 cup butter
1/4 cup flour
2-1/2 cups milk
2-1/2 cups Swiss cheese shredded, divided
2 tsp. dry mustard
Salt and pepper to taste
8 (1 -inch-thick) slices Fresh Service Bakery French or sourdough bread toasted
12 oz. turkey breast cooked, thinly sliced
8 tomato slices
8 strips bacon cooked crisp and broken in half
Prep time: 20 minutes
Cook time: 15 mintues

Melt butter in a medium saucepan. Stir in flour and cook for 1 minute over medium heat. Slowly whisk in milk, cooking and stirring for 5 to 10 minutes or until thickened. Stir in 2 cups Swiss cheese and dry mustard, cooking until cheese is melted. Season to taste with salt and pepper. Place bread slices on a baking sheet. Top with equal amounts of turkey, tomato and bacon. Spoon hot cheese sauce over the top and sprinkle with remaining Swiss cheese. Place under the broiler and cook until bubbly and lightly browned.

Makes 8 open-face sandwiches.
