Kentucky Bourbon Pie
Kentucky Bourbon Pie
Pastry for single-crust pie
3 eggs
3/4 cup dark brown corn syrup
1/2 cup sugar
1/4 cup butter softened
1-1/2 tsp. vanilla extract
Dash salt
1-1/2 cups pecans coarsely chopped
3/4 cup chocolate chips
1/3 cup bourbon*
*This has a bit of a kick to it! Reduce bourbon to 1/4 cup for a milder taste.
Prep time: 15 minutes
Cook time: 50 to 60 minutes

Preheat oven to 350°F. Press pie crust into a 9-inch pie plate; turn under excess dough and flute edge. In a large bowl, beat together eggs, corn syrup, sugar, butter, vanilla and salt; beat well. Stir in pecans, chocolate chips and bourbon and pour into crust. Bake on a lower oven rack for 50 to 60 minutes or until a knife inserted in the center comes out clean. (Make a collar out of foil to cover the crust edges if they brown too quickly.) Let cool before cutting into thin wedges. Top each slice with a dollop of whipped cream, if desired.

Makes 12 servings.
