Garlic and Herb Roasted Yukon Gold Potatoes
Garlic and Herb Roasted Yukon Gold Potatoes
5 lb. Yukon Gold potatoes
1/4 cup extra virgin olive oil
McCormick Sea Salt and pepper freshly ground
2 cloves garlic minced
1/3 cup fresh herbs (such as rosemary, parsley, thyme, safe or basil) chopped
Prep time: 20 minutes
Cook time: 1 hour, 5 to 10 minutes

Preheat oven to 375°F. Cut potatoes into bite-size chunks and toss with oil. Spread onto 2 large baking sheets and sprinkle with salt and pepper. Bake for 1 hour, stirring occasionally, until golden brown. Stir in garlic and cook for 5 to 10 minutes more. Remove from oven and toss with fresh herbs.

Makes 8 to 10 servings.
