Dutch Baby Puffed Pancake

Dutch Baby Puffed Pancake
2 tbsp. + 1 tbsp. butter
3 eggs
1/2 cup flour
1/2 cup milk
2 tbsp. sugar
1/2 tsp. vanilla extract
Dash cinnamon
Prep time: 10 minutes
Cook time: 15 to 20 minutes

Turn on the oven to 425°F. Put 2 tbsp. butter in a small dish and melt in the microwave for 30 seconds. Pour melted butter into a blender container and add eggs, flour, milk, sugar, vanilla and cinnamon. Put the blender lid on tight and mix for 1 minute. Melt remaining 1 tbsp. butter in a 9- or 10- inch ovenproof skillet or baking dish. Pour in the batter. Bake for 15 to 20 minutes or until very puffy and golden brown. Use potholders to carefully remove the pancake from the oven. Sprinkle with powdered sugar or serve with fruit, jam or any of your favorite toppings.
